Sweetened Chestnut Puree

Description

Chestnut purée very versatile and delicious. Can be used in numerous different cakes / desserts or just enjoyed by itself.

Peeling your chestnuts is a time consuming task, but I think after you have tried this it makes it worthwhile.
You can add alcohol to compliment the flavour, but I prefer to do this later depending on how I'm using the purée. This keeps it's uses open and more versatile per batch.

Cooking time: 1hour
Ingredients
300g
Peeled chestnuts
200g
Caster Sugar
1tsp
Vanilla Extract
Method

Place the peeled chestnuts in a pan, add the sugar and add enough water to just cover them.
Bring to the boil and simmer for 30mins to 1hour. The liquid will reduce down to a thick syrup and the nuts will start to fall apart.

Add in the Vanilla Extract and stir through. Place mixture into a blender and blitz until smooth.
Maybe best done in two batches and if it is too thick add some boiling water to make it more pliable.

Empty the mixture into a bowl and leave to cool before refrigerating. This can be frozen or placed into Jam jars for long term storage.
