Place the peeled chestnuts in a pan, add the sugar and add enough water to just cover them. Bring to the boil and simmer for 30mins to 1hour. The liquid will reduce down to a thick syrup and the nuts will start to fall apart.

Add in the Vanilla Extract and stir through. Place mixture into a blender and blitz until smooth. Maybe best done in two batches and if it is too thick add some boiling water to make it more pliable.

Empty the mixture into a bowl and leave to cool before refrigerating. This can be frozen or placed into Jam jars for long term storage.
