Preheat the oven to 190°C/375°F/Gas 5 Prepare the pastry and use to line a 23cm/9inch flan tin, prick the base of the pastry. Line the pastry case with foil and fill with baking beans, bake for 15 minutes, remove the foil and beans, continue baking for 5-7 minutes until golden.

To prepare the filling: Place the lemon rind, juice and sugar in a bowl. Beat until combined then gradually add the crème fraiche and beat till well blended. Beat in the eggs one at a time then beat in the egg yolks, pour into the pastry case. Bake for 15-20 minutes, until the filling is set, if it starts to brown too quick cover with foil. Leave to cool and dust with Icing sugar before serving.
