Spinach Roulade with Cheese Sauce

Description

Spinach Roulade with Cheese Sauce

Serves: 3-4
Ingredients
700g
Fresh spinach
4
Eggs, separated
Pinch nutmeg
Salt and freshly ground black pepper

For the sauce

1.5oz
Butter
1oz
Flour
½pint
Milk warmed
4oz
Cheddar cheese, grated
Pinch nutmeg
¼tsp
Cayenne pepper
Salt and whit pepper
Extra grated cheese for garnishing
Method
1)
Prepare the spinach and cook,drain and chop finely. Mix the egg yolks with the cooked spinach and season with salt, pepper and nutmeg. Whisk the egg whites to soft peaks, spoon 1 tbsp of the egg white into the spinach mix, then fold in the rest, pour into a greased and lined swiss roll tin 8 x 12 ( 20x 30 cm ) bake for 10-15 mins pre heated oven, gas 6, 400ºF 200ºC till just browning.

Meanwhile prepare the sauce, melt the butter in a saucepan over gentle heat stir in the flour and milk, stirring constantly bring to the boil, cook for 5 mins, stir in the cheese, cayenne pepper, salt and pepper.

When the roulade is cooked, take it out of the oven and turn onto a clean sheet of greaseproof paper and peel off the lining paper. Spread some of the sauce on the roulade, the roll up, place back on the baking sheet, pour the rest of the sauce over the roulade and top with more grated cheese, place back in the oven for 5-10 mins, till golden brown. Serve immediately.
